If you are a healthy choice mama or a salad eating foodie, here’s a recipe for a HEALTHY absolutely delicious vinaigrette that will say, “I love you!” to your precious body.

Ditch the bottle dressings. They’re expensive and, frankly, not as yummy or as healthy as home made.

I eat a big salad almost every day. I never get tired of this dressing. It’s fast, easy to make and the variations are endless.

Last summer friends from Orvieto brought a can of olive oil grown from their own olive trees. When I use it in this recipe, I keep ingredients to a bare minimum by omitting the mustard, so the remarkable flavor and smell of the oil is highlighted.

Use organic ingredients and support your local farmers whenever possible. The extra cost is worth it for flavor, physical health benefits and impact on Mother Earth.

Best Vinaigrette Salad Dressing Ever 

⅔ cup extra virgin olive oil
¼ cup red wine vinegar
1 T Dijon mustard
1 clove garlic, finely minced
1 teaspoon sea salt

Options:
1/8 teaspoon black pepper
1 T  grated parmesan cheese or 2 T crumbled goat feta
1 t minced fresh garden herbs
¼ small-medium red onion, sliced very thin or minced

INSTRUCTIONS
Combine all ingredients in a jar with a tight-fitting lid, shake until well combined.
Enjoy!
